Stats in Demon's Souls and Demon's Souls Remake are the attributes of the player character. All Demon's Souls Stats are leveled up by offering Souls to The Maiden in Black NPC at The Nexus.
How do you Level Up your Stats in Demon's Souls?
To level up, you must talk to the Maiden in Black at The Nexus. You cannot upgrade your character stats until you have beaten the boss of Boletarian Palace: Phalanx. The cost of raising a Level increases as your character's level increases. The amount of souls each level costs is the same for all classes, though classes begin at different levels. For example, a character that starts at level 1 may find leveling up to be extremely affordable, but the character who starts at level 10 didn't have to pay anything to get to that point.
Can you reallocate your Stats in Demon's Souls?
Demon's Souls does not provide a way to re-spec your character, so your level-up decisions are final (unless a player has another player use the Soulsucker on them). For this reason, it is best for players to think carefully about their Builds and plan ahead to specialize. You will want to familiarize yourself with what each Stat does, as well as what Weapons and Spells are available.
Demon's Souls Attributes
Demon's Souls and Demon's Souls Remake features 8 stats or attributes that The player can increase via Level Up. Stats have unique effects on your character's base HP, Stamina, MP, Equipment Load, Attack and Defense. It is important to note that Demon's Souls features a scaling system as well as minimum stat requirements for weapons, and a "Spell Slot" system that limits how many spells you can equip at a time. General Stats
General Stats provide useful information on the current state of the player character.

HP
Determines your total Health.

Item Burden
Item burden is calculated based on what you have in your inventory.

MP
Determines your total Magic Ponts.

Spell Memory
Determines how many spells or miracles the player can have ready to cast at one time.

Stamina
A resource consumed when attacking, sprinting, blocking, or dodging. Regenerates automatically over time when not used. If your stamina reaches zero while blocking, your guard will break and you will be exposed.
Safer Landing
Determines damage from falls.

Item Discovery
How often items drop from fallen enemies.

Equip Burden
Equip Burden is based on what you have equipped. The heavier your armor the higher the burden.
Offensive Stats
Offensive Stats provide useful information on the current offensive stats of the player character.

Attack Power
The attack power of the weapon currently equipped.

Magic Power
100x your Magic stat.

Miracle Power
100x your Faith stat.
Defensive Stats
Defensive Stats provide useful information on the current defensive stats of the player character.

Physical Defense
Displays your current Physical defense. Defines the protection your character has against physical damage.

Magic Defense
Displays your current Magic defense provided by the individual piece of armor. Defines the protection your character has against magic based attacks.

Blunt Defense
Displays your current Blunt defense provided by the individual piece of armor. Defines the protection your character has against Blunt based attacks.

Pierce Defense
Displays your current Pierce defense provided by the individual piece of armor. Defines the protection your character has against piercing based attacks.

Slash Defense
Displays your current Slash defense provided by the individual piece of armor. Defines the protection your character has against Slashing based attacks

Fire Defense
Displays your current Fire defense provided by the individual piece of armor. Defines the protection your character has against fire based attacks

Bleed Resistance
Displays your current Bleed defense provided by the individual piece of armor. Defines the protection your character has against bleeding based attacks

Plague Resistance
Displays your current Plague defense provided by the individual piece of armor. Defines the protection your character has against Plague based attacks.

Poison Resistance
Displays your current Poison defense provided by the individual piece of armor. Defines the protection your character has against Poison based attacks.
Damage Types
There are 9 different types of damage in Demon's Souls. Each Armor provides different types of resistances, making them more or less effective depending on the type of Enemy you are facing.
Enemies have different resistance against the various Damage Types, making some Weapons more or less effective against them.

Physical Damage
Physical damage is the normal damage done by Weapons.

Magic Damage
Magic Damage is the damage done by both Magic Spells and Miracles

Blunt Damage
Blunt Damage is a special type of damage done by certain Weapons

Pierce Damage
Pierce Damage is a special type of damage done by certain Weapons

Slash Damage

Normal
Is a type of damage that Weapons can deal. Some Weapons can deal multiple damage types.

Bleed

Critical
You will deal a critical hit if you attack from behind.

Physical Attack
Shows you the default damage of the weapon, and how much bonus damage you are gaining from the stats bonuses.

Magical Attack
Shows you the default magical damage of the equipment, and how much bonus damage you are gaining from the stats bonuses.

Fire Attack
Shows you the default fire damage of the equipment, and how much bonus damage you are gaining from the stats bonuses.

Damage Reduction
Displays the percentage of Physical and Magical damage absorbed when you block with Weapons or Shields.

Guard Break reduction
Displays the impact resistance of a weapon or shield when you are blocking attacks. Also, reduces the Stamina consumed from blocking.

Durability
Durability is a property of Equipment. Weapons and Armor can break if they’re used too much. All equipable items (except rings or ammunition) have a fixed number indicating how much damage can be sustained before the equipment breaks. You can repair weapons at The Nexus.

Weight
Weight displays the weight value of equipment. Some Weapons and Armor are very heavy, and may impede your movement speed.

Why does every stat have Increases maximum *THING* at the top, and Increases *THING* at the bottom, where both things are the same

Does anyone know what the circle icon is at the start of the armor? its like two half circles and sometimes its all black and other times its half. not sure what it means. i see it when i check arms armor
