What is the Best Class of Demon's Souls?
There is no specific "Best Class" for the game, and players will find all classes can be developed into powerful Builds. That said, there are some classes that provide and easier start. The recommended classes for beginners are: Knight due to its robust stats and equipment, Royalty for the Soul Arrow spell, and Priest for the Heal miracle. Be mindful each class begins with different starter items and equipment.
Can I respec my Character?
Demon's Souls does not provide a way to respec your character, so your level-up decisions are final (unless the player has another player use the Soulsucker on them). For this reason, it is best for players to think carefully about their Builds and plan ahead to specialize. You will want to familiarize yourself with what each Stat does, as well as what Weapons and Spells are available.
Demon's Souls Classes
The cost of raising a Level increases as your character's level increases. The amount of souls each level costs is the same for all classes, though classes begin at different levels. For example, a character that starts at level 1 may find leveling up to be extremely affordable, but the character who starts at level 10 didn't have to pay anything to get to that point. When the level 1 character reaches level 10, going from 10 to level 11 will cost exactly the same amount of souls as it would for the character who started at level 10. Because of this, starting at a lower level actually ends up costing more overall, however the player will be able to put their stats exactly where they want them instead of starting with a more pre-determined kit.

Sorcerer is much better class for pure magic build instead of royalty. You don't waste 6 levels in faith and have only 4 more in luck than royalty, which will make farming easier. This will save you 2 level ups.

It seems to me that there are very few "optimal" classes in this game.
Anything that has high luck can be disregarded, unless you are going for a Blueblood Sword build. Otherwise it's a dead stat.
The op nature of spellcasting also makes classes with less than 10 in INT, MAG or FTH unappealing, reducing your options further. And Magician is rendered obsolete because Royalty exists.
In short, Royalty is always great because of it's low lvl and equipment. Knight and Priest if you have no specific build in mind. Temple Knight and Soldier come after that. Thief, wanderer, hunter, barbarian and magician seem to be niche choices unless I'm missing something.
